2 Boston Butts

I sent in a thank-you message for how my first Pork in the form of a 10 lb Boston Butt turned out last week. I left the excess fat on and put it on fat side down. I had some issues with too much fat in the water pan towards the end of the session. When I refilled the water pan half-way through it wasn't much of a problem but towards the end if I had tried to put water in it would have exploded violently. I have a Brinkman electric smoker and am wanting to attempt 2 Boston Butts (10 lbs each) so I have some to freeze. If I cut the excess fat off will the fat issue go better? Will the bottom one get done faster than the top? And will the smoke session need to go longer? The single went 12 hours and was dead on 190 when I checked it. If this is pushing the smoker's capability too far I will just do 1 and do them more often. I also worry about the drippings from the one on top altering the bottom one.
I appreciate the web site and recommend it often to others when they ask how I did it. Thanks for all the hard work.

Aluminum foil

Do like we do in Texas, after a few hours smoking, wrap the butts up real tight in aluminum foil. After all, you want to taste the meat and not the tree. Too much smoke takes away from the real flavor of the meat. I smoke for about three hours then wrap it up in the foilf. When they're done, they are extremely tender and fall apart. The dripping will remain in the foil, you will need to pour it off or save it and pour over the meat (that's what I do and all my family and friends absolutley love it.)

I see no problem with the drippings problem,only poultry is considered highly prone to cross contamination,foul ALWAYS on bottom...
As for the water thingy, You shouldn't have had a problem if you didn't let the pan go dry! Even if that happens you can put "HOT" water it it and not have the Violent reaction.It is better to use hot water anyhow as it lessens the loss of heat...
