Adding Woodchips to Smokerbox

by Ron
(Saint jOhn, NB, Canada)

When I notice that the amount of smoke has decreased, I need to add more chips to the box. Do I throw the new chips in on top of the old, blackened chips, or do I dump out the box before adding the new chips?

Thanks,
Ron

Smoking chips

It's perfectly acceptable to throw new chips in on top of old ones. For ribs, just throw a whole log of hickory wood in on top of the coals so that you don't need to replenish the chips so often. I often use a mixture of hickory log and mesquite chips. I soak the chips, but not the logs.
