Asian Style Catfish
Ginger. Soy. Hoisin sauce. Three ingredients that make this asian style catfish recipe full of awesaome flavor and a great dish for parties and picnics.
Most of you catfishers clean your catch, then end up turning it into fried catfish. Nothin' wrong with that, other than sometimes a person needs a change.
I love fried catfish myself. Especially when you cut the fillets into cubes, dip 'em in flour, then egg wash, then bread crumbs and deep fry the little suckers. OOOhhh...My mouth is watering right now just thinkin' about it! But a person can eat only so much fried catfish.
This recipe is probably a lot better for you. For one, it's not deep fried in grease. Two...no eggs. Three, when you're eatin' grilled fish, you're probably more likely to have some healthy side dishes, like grilled veggies and such.
Anyway, here's the recipe.
Grilled Asian Style Catfish
4 half-pound catfish fillets
1/4 cup soy sauce
2 tablespoons vegetable oil
2 tablespoons rice wine vinegar
2 tablespoons hoisin sauce
1 teaspoon minced garlic
1 teaspoon grated fresh ginger root
Combine the marinade ingredients and pour over fillets. Marinate the catfish for two hours, or longer for more flavor.
Drain, then grill quickly over medium high heat, 4 minutes per side, or until the fish flakes easily with a fork.
