Beef Brisket- Slicing It, Warming It

After I have smoked my brisket and remove it from the smoker and let is rest for the juices to settle, should I slice the brisket completely? Or should I wait until a customer orders it to slice it? And How do I keep it hot to ensure that I am not serving cold brisket to a customer?

Are you opening a barbeque restarant or somehting? Keep it warm it the holding oven. Slice it as needed, unless it's coming up on the lunch rush.
