Best place to check the temp in an offset smoker.

Hi, I have a Charbroil American Gourmet Deluxe and the temp gauge it came with, well, sucks. I was wondering where would be the best place to place a temp gauge? Would it be better in the lid or can I put in the chimney stack?

Installing Smoker Temperature Gauge

There can be quite a temperature difference in a horizontal smoker from the firebox end to the smokestack end. There will also be temp difference from the top of the smoke chamber down to grate level.

If you mount a thermometer in the lid, position it so when the lid is closed, the probe is a couple inches above grate level, and near the center of the smoke chamber. You could install two thermometers, one near the right side of the lid and one near the left, and you'll have a better idea of the actual smoker temp on both ends.
