WHY AFTER I WRAP THE MEAT IN FOIL FOR A FEW MORE HOURS OF SMOKING DO I GET A REAL BITTER TASTE TO MY MEAT?

Too much smoke!!!!

Smoke for the first few hours, then let the meat retain its flavor. Only wrap meat for rest. In other words no further smoke. OK to cook in foil in oven after smoking meat. Do not over smoke as this or a really dirty smoker will cause bitter taste! Hope this helps....Mike

Wood Chips?

Did you add more wood? I just was served a brisket that was so heavy with smoke, it tasted bitter too! The person smoking it, had said he reall liked a heavy smokie taste...and add way to much wood chips! And it was bitter! What a waste of 22 hours of smoking!
