black soot on turkey smoked in a webber

by ruth k
(richfield mn)

While slicing a turkey done in a webber I noticed black soot on the meat even though I pulled off the skin. Is this safe to eat?

Is Soot Safe to Eat?
by: Bill

If you're concerned about the soot, you could give the meat a quick rinse. To prevent the soot from getting on the meat in the first place, don't stir the coals vigorously. Also, when removing the lid from the smoker, pull it off very slowly. When it's pulled off quickly, it creates an updraft, and pulls soot and ashes up from the charcoal and smokewood chips below.
