boston butt smoking

by big e

I am cooking a BOSTON BUTT for the first time and i am wandering if I should use a mopping sauce or a dry rub or inject the meat so it doesn't get too dry. I will use a combination of wood such as oak, cherry, pecan, hickory maybe mesquite, any suggestions?

Smoking Boston Butt- It's About Temp and Time
by: Anonymous

It does not matter what you do. It's how long and how hot your temp is. My best temp is around 250. I do use a rub, but that will not make it juicy. That just puts a flavor on the meat.

You will do great if you just hold the temp around 250 and make sure that the internal temp is at 160. Time would be around an hour per pound.

The last time I smoked a boston butt, i put a disposable foil pan in the bottom of my smoker filled with water. I suppose you could use any liquid. Beer, water, wine, apple cider, etc. I was not dry at all. Just keep an eye on the pan and refill as needed.
