does the chicken for this jamaican jerked chicken recipe have to be brined?

Like all recipes, you can make adjustments. It's not required to brine the chicken used in a Jamaican jerked chicken recipe if you don't have the time, or just don't want to take that extra step.

you don't have to follow a recipe. But don't expect the same results if you don't on minor adjustments. I like lots of onion and garlic, sometimes that works out fine and other times not so good. If you can follow the recipe do that first....if you don't like it then change it to suit your needs. I change things all the time...like I said sometimes it works and some it doesn't. Doug
