Brining the chicken before smoking

by JoAnne Ewan-Kroeger

Why is the brine recipe different for the whole chicken vs the split chicken? I am looking at your recipe 'How to Smoke a Chicken', with brine and a dry rub recipe.

brine recipe differences
by: Anonymous

Brine recipes can be different due to different brining times required, or different size pieces of chicken being brined. If one brine recipe calls for kosher salt and the other one used table salt, the amounts will be different. One cup of kosher salt equals around 1/2 cup of table salt, by weight.
