brisket internal temp wont go higher than 156

Hi,

I cooked my first brisket a little over 4lb
for 6 hrs at 225 degrees and could only get the internal temp to read 156 degrees.

How do I get the temp to 180-190 degrees?

Like the other reader said, brisket comes up to a certain temperature, then levels off for a while. This is when the heat starts working on the fat and connective tissues, making them soften up and releasing their juices. A smaller, trimmed brisket might take longer than the guideline time of about an hour per pound. It still takes a certain amount of the low and slow cooking to tenderize the meat.

Brisket will come up in temp steadily and then level off for what can be hours. First time I tried it I had to call for takeout.

Best advice I can give you is use remote therm and when it gets to 170~175 put in foil and keep cooking to you get to your desired temperature. In other words start earlier. Hope this helps.
