Irish Brisket Marinade

This brisket marinade is Irish because it's based on an Irish beer! Guinness Extra Stout adds complexity to this marinade, making it like no other. The hops of the beer add a unique flavor and bitterness, while the remaining unfermented malt sugars add sweetness.




Irish Brisket Marinade


1 bottle
1/2 cup
1/4 cup
1/4 cup
1/4 cup
2 Tbs
1 Tbs
1 Tbs
1 Tbs
2 cloves
1

Guinness Extra Stout
water
Worcestershire sauce
brown sugar
vegetable oil
lemon juice
kosher salt
black pepper
soy sauce
crushed garlic
medium onion, chopped



Mix well, making sure that the sugar is completely dissolved. Pour the marinade over the brisket in a large pan and refrigerate, turning it often so both sides get marinated. Or better, put the brisket and the marinade in a large plastic bag, squeezing it every hour.

If you have a marinade injector, pump about one cup of the marinade into the brisket, spaced evenly. Marinate the brisket four hours for the best flavor.

Use apple or another light flavored wood so the flavors of the marinade will come through.


Irish Dipping Sauce

Try this excellent dipping sauce, developed especially for brisket marinated Irish Style!

1/4 cup Guiness Extra Stout
1/2 cup good quality brown mustard
2 T honey(or to taste)
1/2 tsp black pepper
3/4 tsp horseradish


Mix this brisket dip up BEFORE all the Guiness is gone! Make this two hours before serving, so the flavors have time to blend.



If you still have the remaining four unopened bottles of Guinness, serve them with the brisket, so everyone can toast the pitmaster!
