Can Chicken be too Smoked?

I got my husband a propane smoker for Christmas. I will admit we dont know much about this type of cooking. But we eat a lot of BBQ and really like the places with smoked meats but we have made chicken twice (our favorite) with a combination of Hickory, Mesquite and Sugar Maple
And it just doesnt taste very good, kind of bitter, are we getting it too smokey?

Meat thats too smoky

Yes, you are probably oversmoking the chicken. There are a couple of things that will cause the meat to taste bitter. One is, like you suppose, oversmoking with too much smoke wood. Another reason is that the wood smolders too slowly, causing creosote buildup. Creosote will give the meat a tongue numbing sort of quality. Not very pleasant.

Just cut back on the amount of wood you use, starting with just one pan full, or foil wrapped package of chips, whichever you're using. If that's not smoky enough for you, then use twice as much next time. After a few tries, you'll know just how much wood to use for your smoked chicken.
