Can You Marinate and Rub a Brisket?

Generally, I prefer to marinade my brisket for 36-48 hours in a vinegar base marinade, to help with tenderness. I find the flavour given from the marinade can be weak in the finished product though. Is it possible to marinade brisket, then leave a rub on overnight, or will this mar the flavour due to 'too much happening', as it were?

Marinating AND Rubbing Brisket
by: SmokerBill

It's quite alright to both marinate a brisket, then season it with dry rub. I do it all the time. A brisket is a big hunk of meat and can stand a lot of added flavor, if that's what you're looking for.

The only caution is to beware of the amount of salt in the marinade and the dry rub seasoning. It can be easy to overseason the meat with salt if using marinade recipes and dry rub recipes that were designed to be used on their own.
