Can you smoke a rolled pork loin?

I have a charcoal vertical smoker and have a family recipe for Italian pork (beautiful internal rub for the loin, then roll, with the belly left on, rolled up on scored fat and tie up)
Can I do this recipe in my smoker? What will happen to the fat?
