Chewy spare ribs

I received a smoker for Fathers day. I tried smoking ribs in it yesterday. The ribs were in the smoker for about 5 hrs. The temperature never went over 150 degrees but the ribs were really tough. The flavor was good but they were really chewy. I'm not sure what I did wrong. Any ideas?

I smoke both baby backs and spareribs and I try to keep the temperature between 200 and 225. Even then, they still take between 6 and 7 1/2 hours.

One good way to check to see if they're done (without a thermometer) is to pick up one end of the rack with yout tongs. If the other end bends and starts to fall off, they're done - if not, they still have a little left to cook.

You may have had a choked fire;not enough air-too much ash.Check intake vents and see if the fuel is sucking air(good),or you may not have enough exhaust flow... a smaller cooker may not have a vent. There are three things a fire needs,fuel,air,and an ignition source,block one and the trouble begins.Run through and check the system and alwayts keep your exhaust OPEN to draw the air.
