Chipotle Brisket Rub

The smoky flavor of this chipotle brisket rub tastes really great on your brisket. Whether cooked in the smoker, on the grill, or in the oven your chipotle brisket will be a hit.



INGREDIENTS:

One quarter cup chipotle pepper powder
Two tablespoons kosher salt
One tablespoon ground black pepper
One tablespoon brown sugar
One teaspoon cayenne pepper

If you can't find ground chipotle powder you can use a coffee grinder or spice mill to grind your own from dried chipotles.

Combine the ingredients and apply liberally to all sides of the brisket, rubbing in well. Cover the brisket tightly with plastic wrap or place in a food storage bag and refrigerate overnight. Two days in the fridge wouldn't be too long, either.

If cooking this brisket in the oven, place it on a rack above a deep pan (to catch the juices). With the oven set at 250 degrees Fahrenheit, cook for 6 to 8 hours, or until it's tender.
