How do you cold smoke salmon? I have made gravlox but want to make Lox which is brined then cold smoked. I have an electric water smoker.

Can You Cold Smoke In An Electric Water Smoker

Electric water smokers are just too hot for cold smoking salmon. The temperature needs to be below 100 degrees Fahrenheit, and their need to be good air circulation.

Another thing about cold smoking salmon is that it takes a long time. Some that do it commercially smoke the salmon for a couple of weeks.

You could try using your smoker with a water pan full of ice, and the lid taken off. Use a lot of smoke wood to add flavor. That would give the salmon a smokey flavor without cooking it. Then use that for making smoked gravad lax.
