controlling slow cook temperature

I have the small brinkman barbaque pit with the fire chamber off to the side. I am just starting to use the indirect method of slow cooking.I plan to use hardwood charcoal for its cleaner longer cooking advantages. How do I control the 4 to 6 hour cooking times at constant temperatures?

Controlling charcoal burn in pit smoker

Add lit charcoal to the firebox, then adjust the intake vents to regulate the temp. I usually leave the exhaust stack vent half open for the entire session. Open the intake for higher temperature, close to lower the temp. Allow plenty of time for the temperature to stabilize after each adjustment, around 10 minutes. Add more lit charcoal as they burn away in the firebox.

To get a longer burn you can add a layer of unlit charcoal, then dump lit coal on top. That will extend the burning time. You can experiment with using more or less coals to get the desired temperature and burn time you're looking for.
