cooking basics - hard to reach smoking temperature

Hi,just fired up a "bbq-pro" charcoal grill with offset smoker box model cooker. It was hard to get heat past 150 until we added wood to the brickettes and then only 200. It was cooking for like 1.5 hrs. We started late so transfered over to gas grill to finish. Basically we should be cooking at what temp.?
Second,chicken and sausage was pinkish color and family thought it wasn't cooked enough. Is the color of the meat look different when smoked?

Smoker Temp - Pink Meat

As a general rule, a smoker should be close to 225 degrees for smoking most meats. And yes, some meats will remain pink after being smoked, but to be sure, always use a meat thermometer to make sure it's reached it's correct "done" temperature.
