Sure, you can "smoke" the stuffing. The smoker temperature should be up to at least 250, and higher if possible. Put the stuffing in a baking pan so it's no more than 1 to 1 1/2 inches thick. That will ensure it cooks properly. Cook the stuffing until it's temperature reaches 165 for safety reasons.
