Crisp Smoked Turkey Skin

I recently smoked an 11 lb. turkey. I put it into a brine, dry and wet rubbed it prior to cooking. and several hours into the smoking I wet rubbed it with butter several times until finished. The turkey was great but the skin was rubbery. How do you or can you keep the skin crispy like a baked turkey??

For more crisp turkey skin, smoke it at a higher temperature. If you keep it up to near 300 degrees, the turkey skin will be much better. The higher temperature causes the fat to render out of the skin, and at the same time causes it to brown up.

You'll need to cut back on the smoking time when you raise the smoker temperature.
