Venison Done Temperature
by: SmokerBill

To be safe, venison should be cooked so it reaches a final internal temperature of 155-160 degrees. Remove the meat from the smoker when its internal temperature hits 150 and let it rest. Carryover cooking will bring the final temperature up into the safe range.
