Early Morning

I have to say that one of my favorite things about smoking(other than eating the results) Is when I am preparing for a major smoke. The anticipation prior to smoking a nice large Brisket is amazing. So much thought goes into the preparation. And then, getting up in the early morning on the day of the smoke. I love being the only one in the neighborhood up. All is quiet as I prep the smoker and get the charcoal going in the chimney. Sitting on the back steps with my coffee and waiting for the coals to peak, then adding them to the smoker.
Then after a few minutes, the prized piece of meat makes it's way to the smoker. All I can say is I love the smell of Hickory in the morning!
