Getting smoke flavor in my cajun microwave

by Matthew B.

Hello all,
I just built a cajun microwave. Yea I know....look it up on google and you will see what it is. It is basically an outdoor oven....or duch oven. Well I am not going to cook a hole pig in mine. It is only 24x16x16. Roast, chicken, ribs, etc.... I want to try and get smoke flavor in the thing. I really do not want to hook it up to any electrical device or pump or what not. I did attach one of those cast iron smoking boxes you can buy at one of the big box stores to the side and inside of the box right under the lid(which is where the heat is). When I looked at the wood chips (which were soaked in water for ~10 min) the chips were all black. Looked like they were doing something but I saw no smoke coming out of the thing. They were not ash....just looked like black chips. The cooker gets to around 300 degrees and with the smoking box right under the fire I would think it is hotter than that. Should I stick a hot coal in the box with the chips? Any help would be welcome

Matt

Black Smoke Wood
by: SmokerBill

Whenever I smoke in my gas grill, I use an old bread pan to hold the wood chunks, covered tightly with aluminum foil. I poke a small hole in the foil to let smoke out, and believe me, it smokes like crazy for 20 or 30 minutes, depending how much wood's in there.

When I dump it out, all that's left is blackened wood, the same stuff you were left with after cooking in your Cajun microwave. It's actually charcoal, and you can use in on the lid of your microwave next time you use it.

Since your smoke wood turned to charcoal, it had to create smoke inside the box. If it didn't give the meat a smokey flavor, you might try mounting another one on the other side, and refilling them with fresh wood once as the meat is "microwaving".
