I just bought my first smoker and was planning on smoking ribss this weekend using hickory wood. but how do i get it started? do i need to throw preheated charcoals in and then put my wood on top or do i just put my wood in and light it up? Im using a side firebox type smoker.

If you have not seasoned the smoker , you should . Simply spray the WHOLE inside(and out too, it helps keep the paint on-cures it somewhat).Light the fire with charooal(in a Charcoal chimmney)until the coals are white with ash...Put this in the smoker and add (dry) chunks of your favorite wood(2"x2"or so)and let it start well enough it starts to decrease the smoking, look for Thin Blue Smoke.Basically , if you can SMELL the smoke , it's good enough.

Hope this helps and SMOKE HAPPY ;}-
