Try This Marinated Salmon Recipe

Gravad Lax - Marinaded Salmon
This recipe can be used with trout with equal success.
Great served on toasted breads and crackers.
Ingredients
1-1/2 pound filleted side of quality salmon
1 teaspoon dried dill weed
2 teaspoons cracked black pepper
2 tablespoons Kosher salt
1 tablespoon sugar
1 tablespoon brandy
Preparing Your Salmon
Combine the black pepper, salt, sugar and brandy. Cut the salmon into two equal size pieces. Cover the bottom of a dish with some of the dried dill weed. Place one of the salmon fillets, skin side down, into the dish, right on top of the dill. Rub half of the dry mixture onto the top of the fillet. Sprinkle some more of the dill on the salmon, then repeat the process with the other fillet, only this time placing the skin side up.
Cover with a piece of aluminum foil. The fish needs to be pressed with a weight as it cures...a brick wrapped in foil works well for this.
Refrigerate, turning every twelve hours for two days.
To serve, slice thinly. This makes a really great appetizer for those holiday get togethers!
