Grill Temperatures

Grill recipes call for grill temperatures ranging from low to very hot. Adjusting for the different heat levels can be accomplished by adjusting the gas flame, using more or less charcoal, spreading the coals, or by adjusting the space between the coals and the food. The trick is knowing when HOT is HOT!


The Grill Temperature Test

The technique for checking your grill's temperature is simple. Carefully place the palm of your hand at the level your cooking food will be and count until your hand gets so hot you have to move it away. The following guidelines will let you determine the heat level of you grill before you grill those ribeye steaks.

  • Very Hot.......1 to 2 seconds
  • Hot..............2 to 3 seconds
  • Medium-Hot...3 to 4 seconds
  • Medium.........4 to 5 seconds
  • Medium-Low..5 to 6 seconds
  • Low.............6 to 7 seconds


Using this method, you can easily find out if you grill temperature's right on the money, or if it needs adjustment. Just be careful. If you touch that grate you'll get burned instantly, and that'll take all the fun out of your barbecue!
