Grilled Catfish

White fleshed fish is lower in fat and calories that oily salmon. With this grilled catfish recipe, you can enjoy a tasty meal and know that you're eating a low calorie, healthy food.

Catfish fillets can be bought at most grocery stores in either fresh or frozen form. This grill recipe for catfish works well with either. For the recipe you'll need...

  • 4 half-pound catfish fillets
  • 1/2 of a medium onion, chopped
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup white wine
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Combine all of the ingredients except the cat fish fillets. Lay the fillets in a single layer, into a glass baking dish. Pour the marinade over the fish, cover with plastic wrap, and refrigerate for 30 minutes to one hour. (You could also marinate the catfish in a heavy duty freezer bag.)

On a grill preheated to medium high, grill the catfish fillets for 4 minutes on each side, or until the meat just begins to flake. Don't overcook the fish, or it will be dry and have less flavor.

Enjoy your grilled catfish fillets alongside a fresh garden salad and a slice of crusty French bread. A bit of the leftover white wine would be nice, too!
