Grilled Pineapple Rings
For a simple dessert, grilled pineapple rings are a great way to finish off a meal. Use fresh pineapple if possible. It'll have much better flavor and texture than pineapple from a can.
Canned pineapple will be found packed in syrup, or in juice or water. If you have to use canned pineapple, don't use the syrup packed version. The sugars will burn easily over the high heat of the grill. To prepare a fresh pineapple, first cut off the top and bottom. Next, remove the core, either with a long slender knife or a pineapple corer. Finally, remove the skin and slice the pineapple into half inch thick slices. Try cutting the slices diagonally for a different look. Dry the surfaces of the rings with clean cloth or paper towels, then give them a quick spray or brushing of cooking oil. Place on a preheated grill, over direct high heat for just a minute or so on each side. Distinct grill marks are what you're after here. When serving the grilled pineapple rings, top them with a sprig of fresh mint and drizzle on just a touch of good quality balsamic vinegar. You'll have a grilled dessert that's light and healthy, and at the same time sweet and deliciously satisfying.
