Great tasting grilled potato salad is a perfect side dish to your favorite smoked salmon or grilled steak recipes. A flavorful parmesan cheese dressing adds a rich flavor to this new potato recipe.
Small sized new red potatoes are the first choice for this salad. Mature potatoes don't have the flavor and texture that new potatoes have. But, if you can't find the new ones, use full size red potatoes, cut into 1-1/2 inch chunks.

For the Grill...
2 pounds new red potatoes
1 large sweet red bell pepper, quartered
(coat the potatoes and pepper with olive oil, season lightly with salt and pepper)
For the Dressing...
1/2 cup extra virgin olive oil
1/4 cup freshly grated parmesan cheese
1/2 teaspoon white pepper
4 green onions, with tops, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon kosher salt
Grill the potatoes and red bell pepper sections until done. Combine the extra virgin olive oil, parmesan cheese, and white pepper to make the dressing.
Cut the grilled new potatoes and pepper sections into bite-sized pieces, then combine with the parmesan dressing, parsley, green onions and salt. For a good looking presentation, arrange parsley, green onions and pieces of red pepper on top.
Try substituting Yukon gold potatoes in place of the reds. The texture of Yukon golds works very well in potato salads, plus, the yellow-gold color of the potatoes looks great in the dish.
