Bivalves, such as clams, mussels and oysters should be inspected well before grilling. Make sure the shells are held together tightly, which means that the critter is alive and healthy. With mussels, snip off the beards right before they go on the grill. The shells will open slightly when they are done. Remove them immediately and enjoy with a bit of salsa.Pre-cooked crab legs are easy to grill. Place them over medium heat and cook until heated through. Serve with melted butter. When cooking lobster on the grill, it's best to kill them and remove the tail and claws to grill separately. The claws will take a bit longer to cook than the tails. As an option, the lobster can be split lengthwise with a sharp knife before grilling. Scallops are usually bought with the shells removed and the meat trimmed. Available in different sizes, scallops are very good when wrapped with a slice of bacon, then grilled.
