I like my deer burgers, and this recipe for grilled venison burgers is one of my favorites. When grinding the deer with my KitchenAid grinder attachment, I'll run several whole Jalapenos through it at the end to clean out the remaining meat, a mix those ground peppers with some of the ground venison before it's frozen.
When I'm ready for a batch of deer burgers, I thaw one pound of the ground Jalapeno-venison and add the rest of the ingredients.
One pound of ground venison with Jalapenos
One pound of beef hamburger
One half cup yellow onion, chopped
Two tablespoons ketchup
One tablespoon Worcestershire sauce
One teaspoon salt
One teaspoon ground black pepper
One teaspoon chili powder
One teaspoon garlic powder
Combine all the ingredients, then form the meat into patties. Be gentle when shaping the meat. The burgers will have a better texture if you use a light hand here.
Grill the venison burgers over direct medium high heat for about five minutes, then flip 'em over. cook for another five minutes or so, or until the internal temperature reaches the safe eating temperature of 160 degrees Fahrenheit.
Finish grilling these topped with a slice of American cheese, then serve 'em on buns with all the fixin's.
