How do I get fall of the bone meat in a propane vertical smoker?

I recently purchase a vertical smoker and when I smoke ribs they seem to be juicy but tough. I smoke 2 lbs. for about 3 hours on 225F. I have tried twice with the same results. What is a good way to get fall of the bone ribs?

Don't over cook your ribs.

If the meat falls off the bone, you have way over cooked them.

Smoke ribs longer

Leave the ribs in an hour or so longer, removing them when they are tender. To shorten the cooking time you can wrap the ribs in foil after a couple hours of smoking, and cook for another hour. The foil speeds up cooking.
