I'm smoking a turkey. I want to keep the temp from 220-240. It keeps going above that temp. what do I do?

Try using charcoal

Try using a small pile of charcoal briquettes for the main heat source, then add smoke wood occasionally for flavor. Adjust the amount of charcoal used, and replenish the coals with more burning briquettes as needed to maintain temperature.

The method of regulating smoker temperature varies depending on the type of smoker you have.

Basically, decrease the heat output of your heat source. Adjust the intake vents on a charcoal smoker. Use ice water in the water pan of water smokers. Last resort, crack open the lid a bit to release excess heat.
