How do you use a pit smoker

by Gary

I have a side firebox type smoker but I can't get it up to temperature. I have used both charcoal briquettes and lump charcoal. How much should I use to start and how often do I need to add more?

get it hot

In a side box smoker I usually start with lump coal, spread that out evenly and add some oak or black walnut a couple of hours before the meat goes on. This will allow time for the smoke chamber to heat up..... if your smoker is not a very heavy guage steel then it will not take as much to heat, but will require you to add more often. You can also try putting boiling water in your water pan to get to the heat you want. I hope this helps and happy smoking.
