Indirect Grilling with a Water Smoker

In addition to smoking I am interested in using my water smoker for indirect grilling. There are occasions, such as weeknights, when I want to indirect grill chicken thighs as opposed to barbequeing for the sake of time. I was wondering about how to position the charcoal and the racks as well as whether or not to use the water pan with or without water or if I should remove it completely. Your advice is appreciated.

Thanks for the info about filling the water pan with sand. The other problem I have is that it's a Charmglow and has no vents in the lid. Does anyone have an idea as to how to retrofit a makeshift vent for it?

It sounds like you have a Brinkman type cooker. In my opion,I would fill the water pan with sand,an excellent heat sink and will get your temps. over 212*F whereas the water will hold the temp. there. Control the heat with your air intake.Make sure coal or fuel is glowing well...
