Is the wood suppose to burn

by Justin
(Gilbert, Az)

I just bought an electric smoker and my first time using it I put 5 wood chunks (soaked for 20 min) on top of the lava rocks and about 45 minutes late I went to check on it and the wood just burned to ash. Is that normal?

Smoker wood Turns to Ash
by: SmokerBill

If the wood is open to the air, it will usually ignite and burn, either by bursting into flame or just burning away like a hot coal.

If it goes up in flames, there will be much less smoke put out, plus the smoker temperature will spike temporarily, overheating.

It best to wrap the chunks in aluminum foil. They will get hot, put out smoke, but not ignite. When you pull out the foil packs, you'll have chunks of lump charcoal to use in the grill.
