keeping the smoker temperature up

I recently bought a char-broil gas fired smoker.
The smoker temp got up to 200 deg but when I put the meat in it dropped to 150 and I couldn't get the temp back up. Is this normal? Should I heat it to a higher temp?

what i found out was the temp would only go to 200
when i had water in it.when the water was gone the temp would rise.so what i did was picked up a rack that was 3 inches high got a pan and put water in it on top of the water tray will post what happens thursday after i test it.put your chips in the chip bowl but don"t put water in it.

grill themometer

Just buy a grill themometer and put it in center grill grate and judge it buy grill themometer. That's what I did, the one that comes with it is usually messed up not right. Problem solved. Buy one that can stand at least 600-800 degrees Farinheit.
