Little Chief Temperature

by Mickey
(Santa Cruz)

I just got a unit at a garage sale and wonder if its temperature will be hot enough to cook pork or if it will only smoke the meat and then I'll have to bake it in the regular oven. I do plan to put a thermometer in the meat to see what reading I get.
advice and comments appreciated.

Little Chief Temperature
by: SmokerBill

Both the Big and Little Chief smokers are designed to operate at about 170 degrees in shirtsleeve weather. The temperature is regulated by a thermostat, so they don't go over the set temperature.

These smokers can be used to smoke sausages and fish to completion, and to make jerky, but larger cuts of meat like brisket, ribs, pork roasts and chicken have to be finished off in the oven after being flavored with smoke in the Little Chief.

Cooking meat at low temperatures for a long time opens up the possibility of spoilage. Large cuts will be in the Danger Zone (40-140 degrees) for too long of a time to allow for safe cooking.
