by George V.
(Anacortes, WA)

Someone suggested that the wood from the Madrone tree would be good for smoking beef. I need guidance before I ruin good meat! Any thoughts?

I have used madrone many times and always turned out great! I have a brisket smoking with madrone right now. The flavor is not overpowering, but definitely good!
