maintaining charcoal smoker temperature

We just bought a charcoal smoker today. How do we keep the temp right? We are doing cornish hens. The gauge on the smoker says "warm/ideal/2hot". We try to keep it in the ideal however it keeps getting too warm. When we add more charcoal it goes up. Are we just not adding enough charcoal to begin with?

charcoal smoker too hot

Control the burn of the charcoal with the air vents at the bottom of the smoker (if it has any). If not, just keep adjusting the amount of charcoal you use until you figure out the right amount. Smoking is an art, not a science.
