I don't know if there's anything that can't be cooked in a smoker. I've even heard tell of smoked cherry pies before. I have a recipe for smoked baked beans on my site, and those are always good. Cooking chili in the smoker might require some precooking, then put it in the smoker for flavor.
Or, you could smoke the meat, the use it to make smoky chili on the stovetop.
