Personally, I think poultry is the best meats to smoke. W/ the skin left on its provides a container for the internal juices which seem to steam cook while the smoke preserves the meat. I usually smoke alot of chicken then refrigerate it & eat it over the course of the next 3 days or so and it tastes better on day three than day one.

There's still alot to be learned why smoking is such a great way to cook & preserve meat. Iceland smokes alot of meat.
