McDonalds has a unique taste to there onions that they put on their hamburgers. Does anyone know what type of onions they use and how they prepare them to get that taste?
The diced onions on most of the fast food burgers, and even many higher class places, are dehydrated. At McDonalds they get put in water the night before, and by the time they star serving lunch they are ready. On another note, and onion strips or slices they use are fresh. Any place with them will gladly substitute the fresh if you request it, and vice versa.

I've taken dehydrated dried onion's and reconstituted them in water and then sauted them and they turn out just like IN and OUT grilled onions.

I looked around and what I found surprised me. The diced onions arrive at the McDonald's restaurant as dehydrated, diced onions. They are reconstituted by soaking in water for a few hours.
I always though the diced onions on the burgers were fresh chopped, then heated on the fryer a little.
I've always heard that dehydrated veggies have more taste than fresh vegetables, because dehydrating concentrates flavor. That could be why they taste good, or it's possible that the dices are flavored up with seasonings before being dried.
