By precooking the ground beef before stuffing the peppers, these have much less fat than your average stuffed peppers. And because they're smoked they have much better flavor. The filling is seasoned with a bit of chili powder for just the right amount of spiciness.
Especially in the Southwestern U.S., mesquite is a popular smoking wood. This beef rib recipe is smoked using mesquite, and seasoned with soy sauce, Worcestershire sauce and a simple rub containing brown sugar, onion powder, salt and black pepper.
Traditionally roasted over open pit oak fires, a Santa Maria tri tip also cooks well in the smoker. Because of the higher smoker temperature used for this recipe, it doesn't take a lot of time. The heat also creates a nice, flavorful crust.

A beef cross rib roast has really good flavor, but can sometimes be a little tough. I like these when cooked to medium-rare in the smoker, then sliced thin for sandwiches. The bacon topping used in this recipe adds a nice touch of flavor.
Economical, flavorful and quick cooking pork chops are a good choice for those, and many more reasons. This pork chop recipe starts with an apple juice based brine. A rub containing Italian herbs adds a nice flavor.
To decrease cooking time, the chuck roast is wrapped in aluminum foil after being smoked for three hours. Tightly wrapped in foil, the beef is braised in its own smoky juices, and when done is very moist and tender.
