new smoker but no instructions

My wife bought an electric smoker at a garage sale and ther were no instructions. This is the first time that I've ever tried smoking. I'm doing a pork butt, but the question is do I leave water in the bottom pan with the wook chips and do I keep putting water in it or let the pan go dry? Thanks Rick

Wood In Electric Smoker

Yes, that's right. The wood doesn't go in the pan, but should be wrapped in foil and layed right next to the electric heating element in the bottom of the smoker.

The pan should be elevated above the heating element a few inches. There should be brackets that hold it and the lower rack up.

It's normal for meat to start looking a little dry in the smoker. The dry outer layer is called the bark.

New Smoker

This is the "new smoker" back again. I have a Smoker-H2O-Electric by CharBroil. I have been smoking a 7 lb pork butt for about 5 hrs. I soaked the apple wood chips for an hour prior to putting in the smoker. The chips and water are in the bottom pan and the butt is on the next higher grill. I just added more water to the pan since the wood, and meat started looking dry. Is this ok? This is my day off and when that happens, everyone leaves the cooking to me. I don't mind it but sometimes I get taken advantage off. But I do HATE cooking a bad dinner !!!!! All help will be humbly appreciated. Your brother in Christ and Cooking~!!!!

What name brand is it? Chips shouldn't go in the water pan.
