new smoker...and loving it..

If you don't have enough time to fully smoke your meat can you continue the next day and if so, what would be the best way to store it until you can begin again?

Caution with partially cooked meat

In my opinion, you should NEVER partially cook your meat with the intention of completing the cooking later. By raising the temp of any piece of meat and then stopping the cooking process you are giving an open invitation to food poisoning. Better safe than sorry...

Well, I would plan to have the time to complete the trip!!! LOL However, you could wrap in foil and finish in the over at 225*F-OR- place, in the refridgerator,remove when ready to finish, remove the foil,(place in the smoker cold as to cause the reaction that causes the smoke absorbtion into the meat). Temps. are essential, keep the smoker at no more than 250*F and let the meat come to 190*F Internal Meat Temperature and re-wrap in foil and let set wrapped in a big towel in a dry cooler, for 2 to 3 hrs.It will increase to 200*F or so and be fork tender...
