I tried Smoked Turkey Legs in the Oven - although it say fully cooked - how long must I bake the turkey until the skin is soft enough to eat

Take the turkey apart. Separate the sides of the breast and the leq quarters and the wings from the carcass bones. Oven temp 325, cook only until the meat hits 155 degrees, since it's already completely cooked and just needs to be warmed up for eating. Keep it covered with foil when it's cooking.
