Placing Baby Back Ribs In Vertical Smoker Top or Bottom Rack

Hello...My charcoal H20 smoker has 2 racks. Question is can I put one rack of Baby Backs on each rack or do they need to go on top or bottom? Do not think both racks of ribs will fit on one rack of smoker. Also I guess about 4 hrs. would be good?

Where To Place Ribs In Smoker

It's easiest to smoke foods that are placed on the top rack of a vertical smoker. They are easier to reach for turning and basting.

There are a couple of tricks you can use to get more baby back slabs on a single rack. One way is to use a rib rack, available at most bbq supply sections in stores. The ribs go into it standing on edge, making room for 3 slabs where only one could lay before.

Another way to make more room is to roll the slabs. Right before placing the racks in the smoker, roll them so that one end of the slab crosses over the other end. Then run a metal skewer through the slab to hold it in that configuration. Stand the rolled slabs on their sides, and you can easily get 4 slabs, maybe more, on a single meat smoker cooking grate.
